Ingredients for - Baingan Bharta

1. Eggplant, peeled and cubed - 2 medium
2. Vegetable oil - 3 tablespoons
3. Onions, chopped - 2 medium
4. Tomato, chopped - 1 medium
5. Garlic, chopped - 2 cloves
6. Fresh ginger root, peeled and chopped - 1 (2 inch) piece
7. Garam masala - 2 teaspoons
8. Cumin seeds - 1 teaspoon
9. Brown mustard seeds - 1 teaspoon
10. Ground coriander - 1 teaspoon
11. Chili powder - ½ teaspoon
12. Ground turmeric - ¼ teaspoon
13. Fresh cilantro - 1 sprig

How to cook deliciously - Baingan Bharta

1. Stage

Place eggplant into a large pot and cover with water; bring to a boil. Boil until tender, about 10 minutes. Drain.

2. Stage

Heat oil in a skillet over medium-high heat. Add onions, tomato, garlic, and ginger; cook and stir until onions have softened, 3 to 5 minutes.

3. Stage

Mash eggplant with a fork; add it to the skillet along with garam masala, cumin seeds, mustard seeds, coriander, chili powder, and turmeric. Cook and stir until liquid evaporates, 2 to 3 minutes.

4. Stage

Garnish with cilantro sprig.
