1. Canola oil or extra virgin olive oil - 1 tablespoon
2. Boneless, skinless chicken breast, cut in bite-sized pieces - 10 ounces
6. No-salt-added black or red beans - 1 (15 ounce) can
7. Minced green chilies - 1 (4.5 ounce) can
8. Yellow whole-kernel corn, frozen or canned - 1 cup
9. Salt and cayenne pepper, to taste - 1 cup

1. Stage
In a medium saucepan, saute chicken in oil over medium high heat for 3 minutes or until white. Stir in chili powder and cumin to coat chicken. Saute 3-4 minutes. Add remaining ingredients; heat through.
