Ingredients for - Bette's Pineapple Cookies

1. All-purpose flour - 4 cups
2. Baking soda - ¾ teaspoon
3. Salt - ¾ teaspoon
4. White sugar - 2 cups
5. Drained crushed pineapple - 1 cup
6. Vegetable shortening (such as Butter Flavor Crisco®) - 1 cup
7. Eggs, beaten - 3
8. Lemon extract - 1 tablespoon

How to cook deliciously - Bette's Pineapple Cookies

1. Stage

Preheat oven to 350 degrees F (175 degrees C).

Sift flour, baking soda, and salt together in a bowl.

3. Stage

Beat sugar, crushed pineapple, shortening, eggs, and lemon extract together in a bowl until thoroughly mixed. Add flour mixture to pineapple mixture; stir until just combined. Drop dough by teaspoonfuls 2 inches apart onto baking sheets.

4. Stage

Bake in batches in the preheated oven until tops are lightly browned, 12 to 15 minutes per batch. Transfer to wire racks to cool.
