3. 1-1/2 cups fresh baby carrots -

5. 1/2 cup julienned sweet red pepper -

How to cook deliciously - Chicken Foil Packets
1. Stage
Flatten chicken breasts into 1/2-inch thickness and place each on a 12-inch square of heavy-duty foil. Layer the mushrooms, carrots, onions and red pepper over chicken. Sprinkle with pepper, thyme and salt, if desired. Fold foil around chicken and vegetables and seal tightly.
2. Stage
Place the packets on a baking sheet and bake at 375°F until the chicken juices run clear. This takes about 20 minutes. Serve with lemon wedges.
