How to cook deliciously - Currant pie on sourdough
1. Stage
Dough without sourdough: Mix the sourdough at peak activity with the milk and load it into the oven. Add the egg, melted (not hot) butter, sugar, salt, and zest. Weigh the flour, but do not pour all at once, because it may go less or more. We turn on the Knead-raising program, I have it 10 minutes kneading, 20 minutes rests, the next 20 minutes kneading, the rest of the rise. Once the HP has stopped kneading time 2.5-3 hours, the dough will rest (in the photo beginning of rest). Dough with yeast: Pour the yeast in warm milk and let stand for 5-10 minutes until the yeast dissolves. Next load all the ingredients into the oven, according to your instructions. Turn on the kneading program. Do not add all the flour at once, because it may go less or more and leave for 40-50 minutes until the dough increases in 2 - 2.5 times.
2. Stage
Let's begin to make the cream. We measure the milk. Dilute the starch with a little cold milk.
3. Stage
Mix the remaining milk with the sour cream, sugar, vanilla and put on medium heat. Introduce the starch, stirring continuously, bring to a boil. The cream should thicken. Remove from the stove and leave to cool, stirring from time to time.
4. Stage
Our dough comes up after 2 hours if it is on sourdough or 40 minutes if it is on yeast. Line a mold with removable sides with parchment and spread the dough evenly on the bottom of the mold (26 cm, you can take a little larger mold).
5. Stage
Put out the cream, which has cooled by this time. Look at the photo, you can see how thick it is.
6. Stage
Spread it evenly over the dough.
7. Stage
Peel the currants, wash them, let them drain and mix with 1 tbsp. of starch. Pour them on top of the cream.
8. Stage
Make the streusel. In principle, it can be made while the dough is rising. To do this, sift the flour and mix with the coconut flakes, sugar and chopped butter. Grind the mass with your hands or with two forks until it resembles breadcrumbs, it is more convenient to use a mixer with whiskers.
9. Stage
Spread the crumbs evenly. If the cake is on sourdough, leave it to rise for 1-1.5 hours. If the cake is on yeast leave it to rise for 30 minutes. Place in oven for 40 minutes at 180 degrees Celsius. If the top will be very toasty, cover with parchment.
