Knead the dough. I do the following: I mix all the ingredients with a mixer to a single "kolobok", and then I knead the dough with my hands for about 10 minutes more.

The dough should not be very steep. Place the dough in a bowl, lightly greased with vegetable oil, cover with clingfilm and leave in the refrigerator for two hours. I usually put it away overnight. Honestly, I do not know exactly what kind of processes take place there, but after the fridge the dough is so docile, soft, pliable, does not tear at all, and you can roll it out very thin. And the dumplings made of such dough never fall apart when cooked. (Well, maybe one in a hundred...)

Stuffing. Ideally, you need black radishes for the stuffing. Although white or green would be very good. Peel radish and grate it on a fine grater. If the vegetable is too bitter, you can put the grated radish in a colander and rinse it with cold water until the extra bitterness is gone. But I have not come across such radishes... Peel carrots and grate them on a fine grater. Chop the dill.

Mix all the ingredients for the filling, salt and pepper to taste. If the vegetables are very juicy, of course, the excess juice should be drained. But in no case do not pour it out! It can be used to make a sauce for these dumplings.

Sprinkle the work surface with flour. Take the dough out of the fridge, divide it into 3-4 parts and roll out each part into a thin layer. Again, the dough is very pliable, perfectly rolled out to the thickness you need and does not tear.
