On a high heat first roast turkey meat with olive oil (if desired, if the pan coating allows, you can do without oil, the turkey will give a lot of juice and we will not bring the dish to a crust anyway, to preserve juiciness) for about 10 minutes, until the liquid is twice less, and the meat is almost cooked, then add the vegetables and mushrooms.

Continue to stew our mix, stirring constantly, until the vegetables soften. Add sugar, you can add a little more salt if the soy sauce is not too strong, but for me personally, the salt of the sauce was enough and I did not add more salt. If you want to make a more oriental version with obvious flavors, add sweet oriental sauce or ginger, chopped petals, pieces of pineapple or orange + more spices: sugar, salt, garlic, red hot pepper.
5 . Stage
Serve the cooked turkey shavings with your favorite side dish. I decided to try the Young Sprouts Schnitzel, very tasty!
