Ingredients for - Finnish Summer Soup

1. Water - 2 cups
2. Potatoes, peeled and halved - 5 small
3. Salt - 1 teaspoon
4. Ground black pepper - ⅛ teaspoon
5. Butter - 2 tablespoons
6. Green onions, cut into 3 inch lengths - 6 cups
7. Baby carrots - 12
8. Fresh green beans, cut into 1-inch lengths - 1 ½ pounds
9. Fresh shelled green peas - 2 cups
10. Half-and-half - 2 cups
11. All-purpose flour - 3 tablespoons

How to cook deliciously - Finnish Summer Soup

1. Stage

Heat water to boiling in a medium pot; add potatoes. Reduce heat and simmer until potatoes are tender, approximately 15 to 20 minutes.

2. Stage

Add salt, pepper, butter, onions, carrots and green beans; simmer until tender then add peas.

3. Stage

In a small bowl, stir together half-and-half and flour until smooth; stir into the simmering vegetables. Cook, stirring constantly until the soup is slightly thickened. Serve immediately.
