How to cook deliciously - Fried Smelt Dinner of a Seaside Fisherman
1. Stage
First we make the Korean-style sauce. It has to infuse. This sauce will keep well in the refrigerator for up to three days. To make it, we take soy sauce.
2. Stage
Add grated or squeezed garlic, chili pepper flakes.
3. Stage
In a dry frying pan toasted sesame seeds.
4. Stage
Pour the hot sesame into the sauce so that it gives off its flavor.
5. Stage
Add finely chopped coriander and vegetable oil, mix everything.
6. Stage
Set the sauce aside to infuse.
7. Stage
Let the smelt thaw and rinse well under running water. What I like about this fish is that it does not need to be cleaned at all.
8. Stage
Dry the fish with a paper towel. Pour the flour and salt into a bowl.
9. Stage
Bread the fish in flour. Since I was making this dish for a romantic dinner, I decided to serve it in an unpretentious way. We pierce the fish with a skewer through the gills and tail.
10. Stage
Pour the vegetable oil into a hot frying pan. When the oil is hot, put the fish on skewers. Fry the fish on medium heat, leave the lid on. Cook about three to five minutes on each side until the crust browns. I want to note that thanks to skewers this fish is very convenient to turn. But this, of course, is possible when frying a small amount of fish. We put the fried fish on a napkin to remove the excess oil.
11. Stage
You've probably heard that fresh smelt smells like cucumber. Well, I think that cucumbers are the best garnish for this fish, nothing else is needed. Wash the cucumber, cut it into pucks about 1 cm thick.
12. Stage
On the cucumbers with toothpicks we attach the fried smelt.
13. Stage
Serve the fish hot or cold with the Korean-style sauce. Bon appetit!
