How to cook deliciously - Mini strudels with cottage cheese
1. Stage
Combine the egg yolk, vegetable oil, salt and 2 tablespoons of cold water. Stir to mix.

Knead the dough tightly, gradually adding the remaining cold water (2 tbsp.). Knead the dough for 2-3 minutes exactly. My flour crumbs did not want to roll into a ball. The dough will be tight and not sticky, but very buttery.

Once you have managed to combine all the ingredients into a ball, you need to beat it several times (I left it on the table several times + with my hands a couple of times )))). After that, you need to wrap the dough in a bag or cling film and put it in the refrigerator for 30 minutes.

In the meantime, the filling. For it I used cottage cheese, which is sold in briquettes. I already had it with raisins, so I did not add raisins (though I regretted it later! In the photo where you can see the briquette, try to find the raisins ))) Mix the cottage cheese with the vanilla and cornstarch and the steamed raisins.

Separately, whip the egg whites and sugar until fluffy (you can beat them to peaks).

Add whipped egg whites to the curd mass.

Stir everything well.

After 30 minutes, take the dough out of the refrigerator. Divide into 8-12 pieces and roll into balls (I had 9 balls about 5 cm in diameter).

Roll out each ball as thin as possible (better to roll on parchment, since the dough is a little greasy). The dough will be hard to roll out, you will have to use your bogatyr strength.)

On the edge of the rolled out circle lay out the cottage cheese filling with raisins (you can add different toppings, such as cherries, cinnamon apples, prunes... whatever you like!)) I put out 1.5 tsp. of curd mixture, but it's better to put out 2-2.5 tsp. at once, since the filling doesn't leak out!)

Roll up into rolls.

Place all the rolls on a baking sheet lined with parchment and brush them with milk.
14. Stage
Place in an oven heated to 200C for about 20-30 minutes until lightly browned (use your oven as a guide, I had them baked for 20 minutes).

The finished mini strudels measure 16 cm long, 3 cm thick and 3 cm high )) You can make them smaller or bigger, whichever you prefer! )) Now sprinkle the powdered sugar on the ready-made mini strudels and make a nice treat for your friends and family! ))) Bon appetit for everybody!!! )))
