Ingredients for - Noodle Bowls

1. Dried cellophane (glass) noodles - 1 (8 ounce) package
2. Peanuts - 1 cup
3. Heart of romaine lettuce, shredded - 1 head
4. Cucumber, cut into matchsticks - 1
5. Carrots, cut into matchsticks - 2
6. Mung bean sprouts - 1 cup
7. Cilantro leaves, chopped - 1 cup
8. Fresh mint leaves, slivered - 1 cup
9. Chopped green onions - ½ cup
10. Soy sauce, or to taste - ½ cup
11. Wasabi paste, or to taste - 1 teaspoon

How to cook deliciously - Noodle Bowls

1. Stage

Place noodles in a large bowl and cover with very hot water. Let stand until softened, about 15 minutes. Drain and chop into shorter lengths.

2. Stage

Grind peanuts into a coarse, chunky meal using a food processor or mortar and pestle.

3. Stage

Combine noodles, peanuts, lettuce, cucumber, carrots, bean sprouts, cilantro, mint, and green onions in a large bowl. Serve soy sauce and wasabi paste alongside.
