1. Bacon grease - ¼ cup
2. Pork tenderloin, cut into 1/2 inch strips - 2 pounds
3. Butter - ¼ cup
4. Onions, thinly sliced - 3
5. Paprika - 3 tablespoons
6. All-purpose flour - 2 tablespoons
7. Green bell pepper, cut into strips - 1
8. Red bell pepper, cut into strips - 1
9. Yellow bell pepper, cut into strips - 1
10. Fresh jalapeno peppers, sliced into rings - 2
11. Beef stock - 1 cup
12. Tomato paste - 3 tablespoons
13. Garlic, peeled and minced - 2 large cloves
14. Salt - 1 teaspoon
15. Bay leaf - 1

How to cook deliciously - Pork and Pepper Stew

1. Stage

Heat bacon grease in a large pot over medium heat. Cook and stir pork in hot grease until evenly browned. Remove pork and liquid from the pot; set aside.

2. Stage

Melt butter in the same pot over medium heat. Sauté onions in hot butter until tender and lightly browned. Mix in paprika and flour; cook and stir until thickened.

3. Stage

Add pork, bell peppers, and jalapeño peppers to the pot. Stir in stock, tomato paste, garlic, salt, and bay leaf; bring to a boil. Reduce heat, cover, and simmer for 1 to 1 1/2 hours, stirring occasionally.
