Ingredients for - Portobello Mushroom Chili

1. Extra virgin olive oil - 2 tablespoons
2. Onions, diced - 2 medium
3. Garlic, chopped - 2 cloves
4. Chili powder - 1 tablespoon
5. Ground cayenne pepper - ¼ teaspoon
6. Portobello mushrooms, cut into 1/2 inch pieces - 1 ½ pounds
7. Italian-style diced tomatoes - 1 (28 ounce) can
8. Red kidney beans - 1 (19 ounce) can
9. Salt to taste - 1 (19 ounce) can
10. Ground black pepper - ½ teaspoon

How to cook deliciously - Portobello Mushroom Chili

1. Stage

Heat oil in a large pot over medium heat, and cook onions until tender. Stir in garlic, chili powder, and cayenne pepper. Mix mushrooms into the skillet, and continue cooking, stirring frequently, 10 minutes, or until tender.

Pour tomatoes and beans into the skillet. Season with salt and pepper. Reduce heat to low, cover, and simmer 40 minutes.
