1. 1 bunch kale, stems removed and torn into bite-size pieces (9 c.) -
8. 1 apple, cut into matchsticks (1 1/2 cups) -
9. 3/4 c. white Cheddar -
10. 1 1/2 c. shredded rotisserie chicken -
11. 1/2 c. pumpkin seeds -
How to cook deliciously - Rotisserie Chicken Kale Salad with Apples and Cheddar
1. Stage
In a small bowl, whisk together Dijon mustard, honey, and sherry vinegar. Slowly add olive oil, whisking constantly. Season with salt and pepper. In a large bowl, toss kale with dressing, using your hands to massage the kale until tender, 3 minutes. Toss in apple, cheddar, and chicken.
2. Stage
Garnish salad with pumpkin seeds and serve in shallow bowls.
