1. 3 tbsp. extra-virgin olive oil
2. 1 tsp. finely grated lemon zest
3. 1 1/2 tbsp. fresh lemon juice
4. Salt
5. Freshly ground pepper
6. 2 lb. small zucchini
7. c. shaved Parmigiano-Reggiano cheese
8. 3 tbsp. lightly salted roasted pistachios

1 . Stage

In a small bowl, whisk the oil with the lemon zest and juice. Season with salt and pepper. In a large bowl, toss the sliced zucchini with the lemon dressing. Add the Parmesan and the pistachios, toss again and serve.
