1. Italian chicken sausage links, casings removed and sausages cut into 1/4-inch pieces - ¾ pound
2. Onion, chopped - 1
3. Yellow squash, sliced - 1
4. Garlic, pressed - 2 cloves
5. Chicken broth - 1 (32 ounce) carton
6. White beans, drained and rinsed - 2 (15 ounce) cans
7. Italian-style diced tomatoes - 1 (15 ounce) can
8. Baby spinach leaves - 2 cups
9. Red wine - ⅓ cup
10. Italian seasoning - 1 teaspoon
11. Grated Pecorino Romano cheese - 3 tablespoons

How to cook deliciously - Tuscan Bean and Chicken Italian Sausage Soup

1. Stage

Cook sausage in a large pot over medium-high heat until cooked through and completely browned, 5 to 7 minutes. Drain and discard grease.

Add onion to sausage in the pot; cook and stir over medium heat until onion is translucent, about 5 minutes. Add squash and garlic; cook and stir until garlic is fragrant, about 1 minute more.

Pour broth, beans, and tomatoes into the pot; stir. Add spinach, red wine, and Italian seasoning; bring soup to a simmer and cook until hot, about 15 minutes.
