1. Coconut oil 1 ½ teaspoons
2. Zucchini, chopped ½
3. Tomato, chopped ¼
4. Onion, chopped ¼ small
5. Canned chopped green chiles 1 tablespoon
6. Fresh spinach 1 cup
7. Ground chipotle pepper (such as Mrs. Dash Southwest Chipotle Seasoning Blend®) 2 teaspoons
8. Yellow corn tortillas 3 (6 inch)

How to cook deliciously - Vegan Garden Tacos

1 . Stage

Heat coconut oil in a skillet over medium-low heat. Add zucchini, tomato, onion, and green chiles. Cook and stir until tender, 5 to 7 minutes. Add spinach and chipotle seasoning; stir to combine.

2 . Stage

Wrap tortillas in a damp paper towel and heat in the microwave for 30 seconds. Top tortillas with filling.
