1. Coconut oil - 1 ½ teaspoons
2. Zucchini, chopped - ½
3. Tomato, chopped - ¼
4. Onion, chopped - ¼ small
5. Canned chopped green chiles - 1 tablespoon
6. Fresh spinach - 1 cup
7. Ground chipotle pepper (such as Mrs. Dash Southwest Chipotle Seasoning Blend®) - 2 teaspoons
8. Yellow corn tortillas - 3 (6 inch)

How to cook deliciously - Vegan Garden Tacos

1. Stage

Heat coconut oil in a skillet over medium-low heat. Add zucchini, tomato, onion, and green chiles. Cook and stir until tender, 5 to 7 minutes. Add spinach and chipotle seasoning; stir to combine.

Wrap tortillas in a damp paper towel and heat in the microwave for 30 seconds. Top tortillas with filling.
