1. 1/2 c. cooked beans or lentils (from dried beans or drained, rinsed canned beans)
2. 1/2 c. fresh mint, cilantro, or Italian parsley leaves
3. Juice of 1 lemon
4. 1 large egg
5. 1 clove garlic
6. 1 c. Extra virgin olive oil
7. Salt and pepper to taste

1 . Stage

Combine the beans, herbs, lemon juice, egg, garlic, and 5 cup oil in a food processor and blend until smooth, about 1 minute. With the machine running, pour in the remaining oil through the feed tube in a thin, steady stream and to make a creamy and smooth sauce. Stop the machine and scrape the sides. Taste the sauce and season with salt and pepper.
