How to cook deliciously - Ham and Potato Casserole

1. Stage

Preheat the oven to 350°F. Place the potatoes in a large saucepan, and add enough water to cover. Bring the water to a boil. Then, reduce the heat. Simmer, covered, for 8 to 10 minutes or until the potatoes are crisp-tender. Editor's Tip: Parcooking the potatoes cuts down on the baking time. 2. Stage

Meanwhile, in a large skillet, heat the butter over medium-high heat. Add the onion; cook and stir it for four to six minutes or until tender. Stir in the flour until blended. Then, gradually whisk in the milk. Bring the mixture to a boil, stirring constantly. Cook and stir for one to two minutes or until it has thickened. Stir in the cheese, salt and pepper until the cheese is melted. Then, stir in the ham.

3. Stage

Drain the potatoes and transfer them to a greased 13x9-inch baking dish. Top the potatoes with the sauce. Cover and bake until the potatoes are almost tender, 25 to 30 minutes. Then, uncover and bake until the potatoes are tender, 15 to 20 minutes longer. Let the casserole stand for five minutes before serving.
