1. Fettuccini pasta - 1 (12 ounce) package
2. Olive oil - 1 tablespoon
3. Onion, chopped - 1
4. Garlic, minced - 2 cloves
5. Diced tomatoes - 1 (16 ounce) can
6. Tomato paste - 1 teaspoon
7. Fresh mushrooms, chopped - 5
8. Dried basil - 1 teaspoon
9. Dried oregano - ½ teaspoon
10. Dried tarragon - 1 teaspoon
11. Raw green-lipped mussels - 36
12. Olives (Optional) - ½ cup
13. Fresh tomatoes, chopped - 2

How to cook deliciously - Mussels Provencal

1. Stage

Bring a large pot of water to boiling. Cook pasta in boiling water until al dente, about 8 to 10 minutes. Drain.

2. Stage

Meanwhile, heat olive oil in a large saucepan over medium heat. Cook onion and garlic in oil until soft. Stir in diced tomatoes, tomato paste, and mushrooms, and add the mussels. Season with basil, oregano, and tarragon. Cover, and simmer for 10 minutes.

Stir in olives and fresh tomatoes. Cover, and simmer 5 minutes.

4. Stage

Serve mussels and sauce over pasta.
