Ingredients for - Red Wine Pork

1. Bacon drippings - 3 tablespoons
2. Pork roast - 3 pounds
3. Butter - ¼ cup
4. Garlic, minced - 2 cloves
5. Carrots, diced - 2
6. Chopped fresh parsley - 1 tablespoon
7. Bay leaf - 1
8. Salt - 1 teaspoon
9. Pepper - ⅛ teaspoon
10. Tomato paste - 1 ½ tablespoons
11. Sugar - 1 ½ tablespoons
12. Red wine - 1 ½ cups
13. Fresh mushrooms, sliced - 16 ounces

How to cook deliciously - Red Wine Pork

1. Stage

Preheat oven to 325 degrees F (165 degrees C).

2. Stage

Heat bacon drippings in a large skillet over medium-high heat. Brown roast on all sides. Remove roast to a casserole dish. Place butter, garlic, and carrots in the skillet. Reduce heat to medium. Stir in parsley, bay leaf, salt, pepper, tomato paste, and sugar. Pour in red wine, and stir to combine. Pour over pork roast.

3. Stage

Bake in preheated oven for 1 hour. Remove, and arrange mushrooms around the roast. Return to oven, and bake 1/2 hour.
