Make the syrup. Mix 200 ml of water with 200 g of sugar, put on medium heat, bring to a boil and simmer for a few minutes. The sugar should dissolve completely. Put the apples in the syrup and reduce the heat. Boil the apples until semi-cooked, turning them occasionally. It took me 8 minutes. The time depends on the size and variety of apples. It is important not to overcook the apples, so they hold their shape. Transfer the apples to the casserole dish.

Chop 1 lemon finely (I took off the zest so it wouldn't be bitter).

Add the sliced lemons to the syrup from the apples, bring to a boil, then simmer for 10 minutes over low heat, stirring. The result will be caramelized lemons and some syrup.

Squeeze the juice of an orange. The original recipe uses fleur d'orange water. Cut half of the lemon into thin slices.

Separate the whites from the yolks. We do not need the whites. Whisk the yolks with a whisk and 100 grams of sugar over low heat. After a minute add the cream, bring it to a boil and simmer for a while. It is important to stir all the time! Stir in sifted flour until no lumps appear. Add the orange juice and caramelized lemon syrup and cook until thickened, 3 to 5 minutes.
7. Stage
Place the cream on the apples. Place sliced lemon on top. Place in a preheated oven to 170 degrees and bake for 7-10 minutes.
