1. Boneless pork loin roast, trimmed of fat - 1 (2 pound)
2. Garlic, minced - 4 cloves
3. Salt - 1 tablespoon
4. Dijon mustard - 1 tablespoon
5. White sugar - 1 tablespoon
6. Ground black pepper - 1 teaspoon
7. Balsamic Vinegar - ¼ cup
8. Olive oil - ¼ cup

1. Stage

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.

Cut pork loin into even, 1/2-inch medallions.
