How to cook deliciously - Beef under bread crust
1. Stage
It is better to choose flesh without bones, but with small veins of fat, so it will be juicier. Wash the beef and dry it with paper towel. Marinate the beef in a mixture of peppers and soy sauce. It is better to marinate the meat in the evening, wrap it in clingfilm and put it in the fridge overnight.

Grate the loaf (preferably yesterday's loaf) on a grater. Add herbs, minced garlic, salt, pepper and olive oil. Mix everything thoroughly. The crumbs should be sufficiently moistened. You may need to add a little more oil.

Peel the beef from the cling film and fry on a greased frying pan over medium-high heat on both sides until crispy (about 5 minutes). Mix sour cream with pepper and salt. Place the meat in an oiled dish and spread the sour cream sauce evenly on the top and sides.

With your hands, spread the bread crumbs on the meat, covering an even layer on top and sides, trying to press the crust well against the sour cream. Cover with foil and cook in a preheated oven at 200 degrees. Cooking time will depend on the size of the meat and personal preference. It took me about 1 hour and 25 minutes for my well done slice (temperature on a meat thermometer is 72 degrees). 10 minutes before the meat is done, remove the foil to make the crust more crispy.
5. Stage
Let the meat rest a little under the foil (about 15 minutes), cut into pieces and serve. It is better to cut the meat just before serving, so that it is juicier and not dried out.
