2. Diced onion - ¼ cup
3. Diced celery - ½ cup
4. All-purpose flour - 6 tablespoons
5. Vegetable broth - 2 (14.5 ounce) cans
6. Creamed corn - 2 (15 ounce) cans
7. Whole kernel corn, drained - 1 (15 ounce) can
8. Shredded carrot - 2 tablespoons
9. Half-and-half cream - 1 cup
10. Skim milk - ¾ cup
11. Ground nutmeg - ½ teaspoon
12. Ground black pepper - ¼ teaspoon
13. Salt - 1 pinch

1. Stage

In a large saucepan over medium heat, melt butter. Cook onions and celery in butter 3 minutes. Whisk in flour and cook 6 minutes more, until light brown. Whisk in broth and simmer 10 minutes.

Stir in creamed corn, corn, carrot, half-and-half, milk, nutmeg, pepper and salt. Simmer over low heat 10 minutes more.
